Brussels Sprouts Au Gratin

Ingredients

32 ozs Brussels sprouts
2 T Butter
1/2 C Green onions, chopped
3 Slices bacon, fried, crumbled
1 1/2 t Garlic, chopped
1 1/2 t Parsley, chopped
1 t Xanthan gum

1 C Water, reserved from cooking
1/2 t Salt
1/8 t Pepper
1/2 C Cheddar cheese, shredded
2 1/2 T Crushed pork rinds

Directions

Preheat oven to 325F degrees.



Wash and make an "X" on the bottom of the brussels sprouts.



Place in boiling water, enough to cover. Simmer 10 minutes until tender.



Drain and reserve 1 cup hot liquid.



Melt butter in small skillet. Add green onions and saute 3 minutes. Add crumbled bacon, garlic, and parsely. Cook 3 minutes more. Pour in reserved water. Add salt and pepper. Mix in xanthan gum to desired thickness.



Simmer until the consistency is like heavy cream.



Place sprouts base down in a buttered casserole. Pour sauce over sprouts.



Top with grated cheese and crushed pork rinds.



Bake 30 minutes until top is golden brown.
