Spinach Enchilada Casserole

Ingredients

2 lbs Ground beef
1 Onion, chopped
3 Cloves garlic, minced
1 C Salsa (check carb count)
1 (10 oz) Pack frozen chopped spinch, thawed and squeezed dry
8 oz Tomatoe sauce

1 Tomatoe, seeded and chopped
1 Bell pepper, diced
1 T Lime juice
1 t Salt
12 LC Tortillas
1 C Sour cream
1 C Jack cheese
1 C Cheddar cheese

Directions

Brown ground beef with onion and garlic. Drain.



Add salsa, spinach, tomatoe sauce, chopped tomatoe, bell pepper, lime juice, and salt.



Simmer 15 minutes, stirring occasionally.



Arrange 6 lc tortillas on bottom and up sides of lightly greased 13 X 9 X 2 inch baking dish., overlapping as necessary.



Spread 1/2 the sour cream evenly over tortillas.



Top with 1/2 the meat mixture.



Repeat layers again.



Bake mixture at 350F degrees about 30 minutes.



Remove from oven and top with cheeses. Bake about 12 minutes more until cheese is bubbly.



Remove from oven and let stand about 10 minutes before serving.



Cut casserole into squares and serve with your favorite toppings (lettuce, salsa, sour cream, jalapenos, etc.)
