Spicy Pecan Pork

Ingredients

2lbs Boneless pork loin
Salt to taste
2 Eggs, beaten
2 Egg whites, beaten
6 T Dijon mustard
1/2 t Ground red pepper

2/3 C LC Dry bread crumbs
2/3 C Toasted ground pecans
2/3 C Almond flour
4 T Cooking oil

Directions

Slice pork loin crosswise into 8 equal slices.



Place meat between 2 sheets of plastic wrap, pound with the flat side of a meat mallet to 1/4 inch thickness.



In a shallow bowl combine egg, egg white, mustard and red pepper.



In another bowl combine lc bread crumbs and pecans.



Dip pork into almond flour one at a time coating well.



Dip pork a slice at a time into the egg mixture, then coat with the crumb mixture.



In a skillet heat oil over medium to medium high heat. Add pork, cook uncovered 6 to 8 minutes or until tender and just slightly pink, turning once.
