Turkey Scalopini Piccata

Ingredients

8 Turkey breast slices, about 2 lbs
Almond flour seasoned with salt and pepper
Juice of 2 lemons

1/2 C Dry white wine
1/2 C Chicken stock
4 T Capers, rinsed
4 T Unsalted butter
1 T Canola oil

Directions

Between 2 sheets of plastic wrap pound out turkey breast to 1/4" thickness.



Season almond flour with salt and pepper and lightly dust turkey with flour.



Add canola oil to a hot saute pan. Saute turkey, browning both sides. Remove turkey from pan.



Deglaze pan with wine, stock, and lemon juice.



Return turkey to pan, add capers and reduce liquid by 1/2 volume.



Remove pan from heat & whisk in butter.
