SCALLOPED EGGPLANT

Ingredients

2 medium eggplant
5 eggs
1 1/4 cups Heavy cream
Salt and pepper to taste

3 cups American cheese, grated
3 cups Pork rinds, crushed
1 1/2 cup butter, melted

Directions

Pare and dice the eggplant into a pot. Cook the eggplant in boiling water until tender. Drain well and put it in a casserole dish.

Add eggs, slightly beaten to the eggplant. Mix.



Add cream, salt and pepper to the eggplant. Mix.



In a large bowl, mix the melted butter with cheese and pork rinds. Add half to the eggplant mixture and put other half on top.



Bake at 450 degrees for 20 minutes.
