Salmon Shepards Pie

Ingredients

1 can (14-3/4 oz.) Alaska salmon
1 pkg (10 oz) Frozen mixed vegetables of choice, thawed

3/4 t Dill weed
2 C Prepared mashed cauliflower
Paprika, as needed

Directions

Drain and flake salmon, reserving 2 T liquid.



Toss flaked salmon with vegetables, dill weed, and reserved salmon liquid; place in a 1 quart gratin dish.



Spread mashed cauliflower over the top. Bake at 400 F degrees, 20 to 25 minutes, until heated through.



Sprinkle with paprika before serving.

Additional Information

This is a great recipe to use the leftover mashed cauliflower!
