Ingredients

2 lb Ground beef
1 T Instant minced onion
1/2 t Garlic salt
1 can Tomato sauce (15 oz)
1 C Ripe olives, sliced
1 C Dairy sour cream

Oil for frying
1 C Cottage cheese, small curd
1 can Green chiles, chopped, drained (4 oz)
1 8 ozs Low carb tortillas
2 C Jack cheese, grated

Directions

Heat oil in deep fryer to 360 F degrees.

Cut tortillas into wedges.

When oil is ready, drop tortilla wedges into hot hoil and fry until crisp.

Season with salt as the chips come out of the deep fryer.

In frying pan, cook ground beef until brown and crumbly. Drain off excess fat.

Add onion, garlic salt, and tomato sauce. Cook, covered, over low heat until just heated.

Remove from heat and set aside.

Combine sour cream, cottage cheese, green chilies, and sliced olives. Set aside.

Crush tortilla chips slightly, reserving a few whole chips for garnish.

Place half of the chips in a well buttered 2 1/2 quart casserole dish.

Now add half of the meat mixture; cover with half of the sour cream mixture

and sprinkle with half of the grated cheese. Repeat layers.

Bake uncovered in 350-degree oven 30-35 minutes or until bubbly hot.

Garnish with reserved tortilla chips. Serve with sour cream if desired.
