low-carb breaded pork chops with mushroom sauce

Ingredients

4 pork chops
salt and pepper
4Tbsp olive oil
4Tbsp dijon mustard
1C low-carb bread crumbs
1Tbsp garlic

1/4 C parsley
1Tbsp chopped garlic
8oz mushrooms
1tsp low carb katsup
1/2C white wine
1C chicken broth
1 1/2 Tbsp flour

Directions

Chops: Sprinkle pork chops with salt and pepper. Sear chops in 2Tbsp olive oil. Aprox. 5min.

Remove from heat and spead mustard on all sides of the chops.

Breading: Add remaining olive oil to a bowl. Add bread crumbs, garlic and parsley. Mix well. Coat chops in bread mixture.

Bake chops 350 degrees for 45min

Mushroom sauce:Cook onion and mushrooms in pan until tender. In a seperate bowl combine wine, katsup and broth. Add broth to mushrooms. Add flour to mushrooms. Cook until sauce has thickened.
