Pork Fried Pork

Ingredients

2 butterfly pork chops
2 large eggs
2tbl Mrs.Dash seasoning blend
(because I like my food extra spicy, I use the extra spicy kind.)
1 cup canola oil
1 cup finely crushed pork rinds

Directions

In large bowl lightly beat eggs and seasoning together. Don't over beat mixture. Next dip one pork chop in egg mixture and then in finely crushed pork rinds. Repeat proccess. Heat canola oil and drop one pork rind in oil to test when oil is ready. The key to keep the pork rinds on the pork chops is to heat the oil hot enough and the pork rinds must be crushed right.Fix the other pork chop the same way. Once heat is hot enough, drop pork chops in oil one at a time. Make sure oil doesn't cover pork chops, because you want to cook one side at a time. Deponding on how thick the pork chops are, cook them for 4 to 7 min. on each side ore untill fully brown and crisp. Remove pork chops from oil and drain on paper towels.

Additional Information

These chops are a perfect sub for fried pork chops, and if you are like me, I Have to have something fried every now and then. Good thing about this is that you are still getting the same taste as fried pork chops with flour, but without the carbs! You can also try this with chicken breasts. ENJOY!!
