Ingredients

Cole Slaw:
2 C Chopped Cabbage
1/8 C White Vinegar
1/2 C Water
2 packages of Splenda
1/4 C Mayo
8 Slices of Corn Beef
8 1 Oz Slice of Swiss Cheese

Sauce:
1/3 C mayo
2 T Texas Pete
(Optional -- pinch of splenda to taste)

Directions

Marinate Cabbage in vinegar, water and 2 Spenda pks for 1 hour. Drain liquid, then mix cabbage with mayo.



On sheet, lay corn beef slices with a slice of swiss on top of each. Broil until cheese is slighty melted -- not running all over. Remove from oven and roll up. In seperate bowl combine mayo, Texas Pete and Splenda. Mix well.

Additional Information

I've tried this with tradition sour krout and didn't care for it. I'm a Rueben lover, but without bread, this variation is tastier to me.

Divide slaw between two small dinner platters and spread out a little. Lay 4 corned beef and swiss cheese logs on each. Drizzle sauce over top of logs.
