Nut muffins

Ingredients

1 cup ground almonds (or other nuts--your choice)

1 oz. whey protein powder (may be skipped)

1/2 cup bran

1/4 cup soy flour or bake mix

1/2 cup splenda or bakeable sweetener

1tsp. cinnamon

1/4 tsp. ginger

1stp. baking powder

1/4 tsp. baking soda


2 large eggs

1/2 cup cream

1/2 cup water

1/2 cup melted butter

1 tsp. vanilla

Optional: small grated apple, 1/2 cup ground cranberries, 1/2 cup blueberries, or other fruit. Adds 1-2 carbs per muffin if you use fruit.

Directions

Preheat oven to 350 degrees.



Mix eggs, cream, water, and vanilla in a small bowl. Add melted butter to cream mixture, and blend thoroughly.



Mix dry ingredients together well, and add the wet mixture to the dry, a little at a time, until well mixed.



Pour into 12 greased muffin cups, and bake for 15 minutes.

Additional Information

I have made these with and without the protein powder, and they taste the same--They just don't have extra protein if you don't use, I think.
