Berried Custard Muffins

Ingredients

1 1/2 t Ground cinnamon
1/2 t Ground mace
1/2 C Splenda -- divided
1 1/2 C Blueberries
6 Whole large egg -- slightly beaten

1 T Vanilla extract
1 1/2 C Heavy cream
1 1/2 C Water
3/8 t Ground nutmeg

Directions

Combine spices and half of the splenda, sprinkle over blueberries, toss lightly to blend. Spoon into a buttered or sprayed muffin pan, distributing evenly.



Combine egg, vanilla, cream, water and remaining sweetener; beat for 1 minute; Pour over blueberries; sprinkle with nutmeg.



Bake uncovered at 325
