Avocado Glazed Chicken Breasts

Ingredients

Vegetable oil
Salt to taste
1 T Tarragon
Pepper to taste
1 T Basil
4 Large chicken breasts, boned, skin on
1 1/2 t Xanthan gum

2 2/3 C Dry white wine
4 T Butter
3 Eggs, beaten
4 small, ripe avocados
1 C Almond flour

Directions

Mix almond flour, salt and pepper.



Dip chicken in egg then almond flour mixture to coat,



Heat thin layer of oil in skillet. Saute chicken skin side down until golden. Turn and saute other side until chicken is tender, golden, and no longer pink and the juices run clear.



Sprinkle herbs over chicken.



Add wine and butter to pan.

Bring to boil and simmer uncovered for 3 to 5 minutes. Add xantham gum a little at a time until sauce thickens and becomes glossy.



Place halved avocado cut side down and slice.



Press down on avocado with palm of hand to fan slices slightly.



Lift with knife or spatula to top of chicken. Spoon some pan juices over top.

Cover skillet and heat briefly just to warm through.

Additional Information

These chicken breasts are also perfect in an avocado salad.
