Parmesan Chowder

Ingredients

2 C boiling water
2 C Turnips, diced
1/2 C Red bell pepper, diced
1/2 C sliced celery
1/4 C chopped onion
1 1/2 t salt
1/4 t pepper

1/4 C Butter
1 1/2 t Xanthan gum
2 C Heavy cream
1 1/2 C Freshly grated Parmesan cheese (not canned)

Directions

Add water to turnips, peppers, celery, onion, salt & pepper. Cover & simmer 10 minutes. Do not drain.



Make white sauce butter & heavy cream. Add xanthan gum a little at a time until desired consistency has been reached.



Add cheese; stir until melted.



Add undrained vegetables.

Heat; do not boil.
