Chicken Breast with Pine Nuts & Goat Cheese

Ingredients

4 Boneless, Skinless Chicken Breasts
4 oz. goat cheese
3 oz. cream cheese
2-1/2 Tbsp. pine nuts toasted and chopped
Fresh baby spinach (torn into pieces)
1 Tsp. Dried Basil and Oregano
1 garlic clove diced and sauteed.
Olive Oil
2 cups hazelnut meal
1/2 cup low-carb bread crumbs (you can make yourself)
1 egg beaten
Salt and pepper


Directions

Wash chicken; slit with knife to make a pocket.



Mix together cheeses, spinach, pine nuts, salt and pepper to taste, basil and oregano. Stuff chicken breasts.



Mix together hazelnut meal, bread crumbs, pepper, and garlic. Dip chicken into egg then into meal/crumb mixture. Drizzle chicken with a little olive oil.



Spray pan with olive oil, bake at 425 degrees for 40 minutes.
