Spaghetti Squash with Vodka Sauce

Ingredients

1 1/2 lbs Prepared spaghetti squash (use leftover if you have it)
2 T Butter
1/2 lb Thinly sliced pancetta bacon, chopped

1/3 C Vodka
1/2 C Heavy cream
1 1/2 C Tomatoe sauce
3/4 C Freshly grated parmesan cheese (not canned)

Directions

Melt Butter in a large skillet over medium heat.



Add pancetta and saute until lightly browned.



Add vodka and stir until it is reduced by half, about 6 minutes.



Stir in tomatoe sauce and cream. Simmer uncovered for 12 minutes. Stirring every few minutes.



Stir in spaghetti squash and heat rhrough. Sprinkle with parmesan cheese and serve.
