LC Chocolate Fried Ice Cream

Ingredients

1 quart of Breyer',s Carb Smart vanilla ice cream
1 C Very finely crushed cashews
1/2 C Finely chopped pecans

1/2 C Unsweetened coconut
3 T Unsweetened cocoa
3 T Splenda
2 Eggs, slightly beaten
Vegetable oil

Directions

With scoop, form 6 ice cream balls. Place on wax paper covered tray. Cover and freeze several hours or overnight.



In a bowl, stir together crushed cashews, pecans, coconut, splenda, and cocoa, set aside.



Coat ice cream balls with crumb mixture, pressing crumbs firmly into ice cream.



Dip balls into beaten egg, coat again with crumb mixture. Place on wax paper covered tray and freeze 2 hours or overnight.



Just before serving, heat 2 inches of vegetable oil in deep fryer to 375F degrees.



Remove 2 ice cream balls at a time from freezer; fry in hot oil for 20 to 25 seconds or until browned.



Drain and serve immediately.

Prep time does not include freeze time.
