Coconut Chewies

Ingredients

2 Eggs
1 C Maltitol crystals
1/2 t Almond extract
1/2 C Butter
1/4 t Vanilla extract

1/2 C Almond flour
2 t Baking powder
1/4 t Salt
1 C Unsweetened coconut
1/2 C Almonds, chopped

Directions

Beat the eggs, splenda, and almond extract in a medium bowl. Mix in the butter and vanilla extract.



Combine almond flour, baking powder, and salt in a small bowl. Stir into egg mixture.



Mix in the coconut, and almonds.



Spread mixture evenly in a greased 8 inch square baking pan.



Bake in a preheated 350F degree oven approximately 20 minutes, test with a toothpick.



Cool on wire rack and cut into squares.
