Key Lime Coconut Bars

Ingredients

CRUST:

1/2 C Brown sugar maltitol
2 C Almond flour
1 C Unsweetened toasted coconut
1/2 t Salt
2/3 C Butter, cold
3 T Ice water
FILLING:

2 (8 oz) Packages cream cheese, softened
1 C Maltitol
1/4 t Salt
3 T Key lime juice
2 t Vanilla extract
2 Eggs

Directions

CRUST:



Lightly grease a 9 X 13" pan.



In a medium size mixing bowl or the food processor, combine the brown sugar maltitol, almond flour, coconut, and salt until evenly mixed.



Cube the cold butter and blend it into the dry ingredients with a pastry blender or a few pulses of the food processor.



Sprinkle cold water over th emixture and toss to distribute. DO NOT OVERMIX, the dough will be crumbly, but will hold together when squeezed.



Using 2/3 of the mixture, form the bottom crust by pressing crumbs firmly into the pan. If the mixture is too sticky use a sheet of parchment paper to cover the crumbs and roll them into the pan with a small roller or a can. Bake the crust in a preheated 375F degree oven for 15 minutes until lightly golden. Remove it from the oven, but keep it warm.



FILLING:



Beat the cream cheese until soft and smooth, scraping the bowl down often. Mix together the maltitol, and salt. Add this mixture along with the lime juice and vanilla to the creeam cheese. Mix just until smooth. Add the eggs and beat until well blended.



Spread the cream cheese mixture over the hot crust. Sprinkle with remaining crumbs over the top, pressing down gently.



Return the bars to the oven and bake them for 20 to 25 minutes until the mixture looks set but still wobbles a little when shaken. The filling should reach an internal temperature of 160 degrees.



Remove the bars from oven and cool them completely before cutting into squares. Keep refrigerated until ready to serve.

Additional Information

I used maltitol in this recipe to reduce the grams of carbs in the recipe. Maltitol has zero carbs in any form.
