Cheesy Squash Bake

Ingredients

6 C Sliced yellow summer squash
10 Slices bacon, cooked and crumbled
2 C Shredded Mild cheddar cheese

8 Green onions, chopped
Salt and pepper to taste
4 T Butter
1 C Sour cream
1 Egg, beaten

Directions

In a large skillet, saute squash and onions in butter until crisp tender and remove from heat.



Sprinkle lightly with salt and pepper.



Combine egg, sour cream and half of the bacon. Add squash mixture to sour cream mixture, mixing well.



Spoon half the squash mixture into a buttered 1 1/2 quart casserole dish. Sprinkle with 1/2 of the cheese over the top, spoon remaining squash into the dish on top of the cheese. Top with remaining cheese and the rest of the bacon.



Bake in a preheated 350F degree oven for 20 minutes until hot and bubbly.
