Sunshine Eggs Benedict

Ingredients

4 Slices low carb bread of choice
16 slices Canadian bacon
Water
8 Eggs
1/2 C Sour cream

2 t Chicken boullion
1/2 C Mayonnaise
1 t Finely shredded orange zest
1/2 t Orange extract
1 t Dijon mustard

Directions

Place bread slices in a single layer on a baking sheet that has been sprayed with cooking spray.



Place canadian bacon in a single layer on another baking sheet that has been sprayed with cooking spray.



Bake both sheets in a preheated 350F degree oven 10 to 15 minutes until muffins are toasted and the bacon is hot. Keep warm.



Lightly greasea 2 quart saucepan.



Add water to half fill the pan. Stir in boullion. Bring water mixture to boil. Reduce heat to simmering.



Break on egg into a measuring cup. Carefully slide egg into simmering water. Repeat with remaining eggs. Simmer, uncovered 3 to 5 minutes to desired doneness.



In a small saucepan, combine sour cream, mayonnaise, finely shredded orange zest, orange extract and dijon mustard. Cook and stir over low heat just until warm, do not boil.



To serve, top each toast slice wtih 4 slices bacon (overlap pieces) and 2 eggs.



Spoon sauce over the eggs.
