Panfried Soft Shell Crabs

Ingredients

4 large or 8 small soft shell blue crabs, cleaned (16 ozs total)
1 Egg, beaten
1/4 C Heavy cream

3/4 C Finely crushed pork rinds
2 T Almond flour
2 T Parmesan cheese
1/4 t Pepper
7 T Cooking oil

Directions

Rinse crabs, pat dry with paper towels.



In a dish, mix egg and cream well.



In another dish mix crushed pork rinds, almond flour, parmesan cheese, and pepper.



Dip crabs into egg wash and then coat them with the crumb mixture.



In a 10 inch skillet heat 4 tablespoons oil over medium heat.



Add half of the crabs, back side down.



Fry 3 to 5 minutes until golden. Turn carefully and fry 3 to 5 minutes more until golden adn crisp.



Drain crabs on paper towels. Keep warm in a 300F degree oven. Repeat, adding remaining oil as needed.



Serve crabs on a bed of curly endive and garnish with fresh thin lemon slices.
