Curried Bisque

Ingredients

1 1/4 lb Fresh broccoli, trimmed, cut up
4 C Chicken broth
1 Onion, chopped
2 T Butter
1 t Salt

2 t Curry powder
Dash of black pepper
2 T Lime juice
8 Slices lemon
1/2 C Sour cream
2 T Chives

Directions

Place the broccol in a large saucepan along with the broth, onion, butter, salt, curry powder, and pepper. Bring to a boil. Reduce heat and simmer, covered, cook for 8 to 12 minutes until the broccoli is just tender.



Place about 1 1/2 to 2 cups of the soup mixture at a time into a blender container. Cover and blend until smooth. Pour into another large saucepan. Repeat with remaining mixture. Be very careful, the hot liquid may splash you.



Stir in the lime juice into the blended mixture.



This can be covered and refrigerated until cold and served cold on a hot day (great in warm weather). Can be served piping hot also.



Garnish bowls of this soup with thin slices of lemon, a small dollop of sour cream and a sprinkling of chives.
