Ingredients

4 Boneless, skinless chicken breasts
2 Eggs
1/4 C Water
2 C Almond flour
1/2 t Garlic powder
1/2 t Dried oregano
1/2 t Dried basil
1 t Dried parsley
Salt and pepper to taste
1 C Dry white wine
1/4 C Lemon juice
4 T Butter
1 t Fresh garlic, minced
1 t Xanthan gum

Directions

Season almond flour with salt, pepper, garlic powder, oregano, basil, and parsley. Mix well.



Season chicken breasts with salt and pepper to taste.



Mix eggs with water and beat well.



Dip chicken into almond flour. Then dip each coated piece of chicken into the egg wash. Then dip the pieces of chicken into the almond flour again.



Saute the chicken in melted butter in a skillet until golden on the outside, and the juices run clear and the meat is no longer pink.



SAUCE:



Saute garlic in butter until tender.



Add wine, lemon juice, salt, and pepper to taste. Simmer gently for a few minutes.



Thicken sauce using xanthan gum, adding a little at a time until the desired consistency has been reached.
