Lamb Stew

Ingredients

2 lbs Lamb, cubed
2 T Butter
2 1/2 C Water
Salt & pepper to taste
1/4 t Dried thyme

3 Medium turnips, halved
12 Pearl Onions
1/2 lb Mushrooms, sliced
1 C Heavy cream
1 t Xanthan gum

Directions

Brown lamb in butter in a large dutch oven.



Add water, salt, pepper, and thyme. Cover and simmer 4 minutes. Skim off excess fat.



Add turnips and onions. Simmer with cover on for 30 minutes.



Add mushrooms and simmer about 10 minutes.



Blend cream and xanthan gum; stir into stew and simmer until thickened, stirring constantly.
