Steak & Guiness Pie

Ingredients

CRUST:

2 Egg
3 C Almond flour
6 T Butter, very cold and cut into pieces
1/2 t Salt
1/2 t Pepper
1/4 t Baking soda

FILLING:

2 lbs Round steak, cut into bite sized cubes
1 T Brown sugar twin
12 Slices bacon, chopped
2 Small onions, quartered
1 Bottle Guinness Stout
3 T Butter
Chopped fresh parsley
1 t Xanthan gum

Directions

CRUST:



Process all crust ingredients together in food processor until it forms a ball. The butter will still be visible in the dough. This is how it should be.



Form two flat circles and chill until firm wrapped in wax paper in the refrigerator.



Brown steak and bacon in the butter.



Place the cooked meat in a large casserole dish.



Fry onions in butter until golden.



Add onions on top of the beef in the casserole dish.



Add the brown sugar twin to the casserole dish.



Pour the Guinness into the casserole dish over all ingredients. Add the xanthan gum a little at a time until gravy thickens to desired consistency.



Cover the dish tightly and simmer in the oven at 350F degrees for 2 1/2 hours. Stirring occasionally, adding a little more Guinness or water if the rich brown gravy gets too thick.



Meanwhile, line a deep pie dish (10") with half of the pie crust. Bake it at 300F degrees until golden, about 20 minutes.



Remove beef mixture from oven and pour into baked pie crust.



Cover the pie with second pie crust, crimp edges and make a decorative cut in center of pie.



Bake pie at 325F degrees for about 20 minutes, until golden.
