Corned Beef and Cabbage

Ingredients

5 lb Corned beef brisket, Point cut
1 Onion stuck with 6 whole cloves
1 t Dried Thyme
1 Small Bunch Parsley
1 Head Cabbage (about 2 lbs), quartered
HORSERADISH SAUCE:

1/2 pint Whipping Cream
2 T Mayonnaise
2 T Prepared horseradish

Directions

Place corned beef in a large roasting pan. Add about 2 inches of cold water to the pan.



Place pan in an oven preheated to 400F degrees, cook beef for an hour uncovered.



Add thyme, parsley and onion. Turn oven down to 350F degrees and cook for 3 hours. Skim fat from top as it rises.



Add cabbage, cover the roasting pan and bake for 40 minutes until cabbage is crisp-tender. Remove the meat and cut into pieces. Place on center of a large platter. Strain the cabbage and season it heavily with black pepper. Surround the beef with the cabbage. Serve with horseradish sauce.



Horseradish Sauce:



Whip cream until it stands in peaks.



Fold in mayonnaise and horseradish. Serve with corned beef and cabbage.
