Traditional Irish Roast Leg of Lamb

Ingredients

1 Clove garlic
1 T Butter
1 leg of lamb (4 - 5 lbs)
10 to 12 stalks of parsley

1 carrot
1 onion
1 T Water
1 1/2 t Xanthan gum

Directions

Crush the garlic and mix with butter.



Put parsley, carrot onion and water in a roasting pan.

Place leg of lamb on top of veggies.



Roast at 350F, reducing heat towards the end of cooking time. Allow 20 minutes to the pound and 20 minutes over, basting every now and again.



The idea of the carrot and onion is to add flavour to the gravy.



When finished roasting, make gravy from meat drippings. Add chicken stock to drippings to equal 2 cups.



Add xanthan gum, a little at a time whisking constantly to avoid lumps. When you have reached the desired thickness, heat gravy until hot and serve with lamb.
