Ingredients

8 Slices hearty low carb bread, such as natural ovens Golden Crunch bread
Whole-grain mustard

16 slices Canadian bacon
8 Thin tomatoe slices
2 C Shredded Monterey Jack cheese

Directions

Place the broiler rack 2 inches from the heat and preheat the broiler. Place the bread in a single layer on the broiler rack. Broil until golden brown, about 30 seconds. Turn and broil for 30 seconds longer. Remove.



Spread 4 of the slices with mustard. Top the remaining 4 slices with 4 slices each of bacon and 2 slices tomatoe and shredded cheese. Return these 4 slices to the oven and broil until the cheese has melted, about 1 to 2 minutes.



Top each of the melted cheese slices with a mustard-coated slice. Place on individual plates.
