Hamburger Stroganoff

Ingredients

1 T Canola oil
1/2 C Onion, sliced
2 lbs Ground beef
2 Garlic clove, minced
1 T Tomato paste

1/2 t dried thyme
1 C Beef broth
Salt and pepper to taste
3/4 C Sour cream
1 t Xanthn gum

Directions

In a large nonstick skillet, heat the canola oil over medium-high heat until hot. Add the onion and cook, stirring, for 3 minutes, until softened. Add the ground beef and saute, tossing, until lightly browned.



Meanwhile, mince the garlic cloves. Add to the meat and cook, stirring, for 1 minute.



Stir in the tomato paste and thyme. Stir in the broth until fully incorporated. Add xanthan gum a little at a time until mixture thickens. Cook for 3 to 4 minutes. Season with salt and pepper.



Remove the pan from the heat and stir in the sour cream. Return the pan to the heat and heat the stroganoff just until heated through. Do not let boil. Keep warm.
