Low Carb Monte Cristo Sandwiches

Ingredients

4 T Butter, softened
8 Slices low carb bread
4 t Sugar free raspberry preserves
8 ozs Sliced smoked ham
8 ozs Sliced Swiss cheese

8 ozs Sliced roasted turkey breast
4 Large eggs
1/2 cup heavy cream
Salt to taste
Cayenne pepper to taste

Directions

Place a griddle or 2 medium skillets over medium heat. Melt the butter on the griddle or divide it between the skillets until it is no longer foamy.



Meanwhile, spread one side of each slice of bread with some of the raspberry preserves. Top 4 of the slices with some of the ham, cheese, and turkey. Top each with 1 slice of the remaining bread, pressing down to form 4 compact sandwiches.



To make the batter, in a shallow bowl, whisk the eggs together with the cream and salt and cayenne to taste.



Dip each sandwich on both sides into the batter, coating it well.



When the foam from the butter subsides, add the sandwiches to each hot surface. Cook for 4 minutes, turn with a metal spatula, and cook for 4 minutes more, or until golden brown. (Use the back of the spatula to press each sandwich down as a way of melting the cheese.)
