Scallion Crusted Lamb Chops

Ingredients

2 Bunches of scallions
6 Slices low carb white bread
4 T extra virgin olive oil
4 Garlic cloves, crushed
4 t Dried rosemary
Salt and pepper to taste
16 Rib lamb chops (2 ounces each)

Directions

Preheat the oven to 475F.



Thinly slice the scallions. Finely chop enough bread to measure 2 cupS of bread crumbs.



In a small nonstick skillet, heat the olive oil over medium heat. Add the scallions, garlic, and rosemary and cook for 2 minutes, or until the scallions have wilted. Stir in the bread crumbs and season with salt and pepper. Remove from the heat.



Heat 2 large ovenproof skillets over high heat. Season the lamb chops with salt and pepper. Add the chops and cook for 3 minutes, until browned on the underside. Turn and top the meaty part of each chop with about 1 tablespoon of the scallion mixture. Place the skillets in the oven to bake for 5 minutes for medium-rare.
