KhonKaen Thai Curry Chicken

Ingredients

2 lbs Skinless boneless chicken breasts
1 t Minced garlic
3/4 t Chopped ginger (1 small piece of gingerroot)
1 T Butter
1 T Canola oil
1/4 C Onion slices

2 T Yellow curry paste
1 C Chicken broth
1/2 C Unsweetened coconut milk
1/2 C Finely chopped cilantro
Salt to taste

Directions

Rinse the chicken breasts and pat dry. Cut into 1-inch pieces.

Chop the garlic and enough ginger to measure 3/4 teaspoon each.
