Xian Chicken

Ingredients

6 Boneless skinless chicken breasts, cut into 1 inch strips
6 Mushrooms, sliced
6 Green onions, sliced into 1/2 inch pieces
1/4 C Soy sauce
2 t Gingerroot, grated

1/2 C Chicken broth
Salt and pepper to taste
1 Can (8oz) bamboo shoots, drained
3/4 C Cashews, toasted
1/2 C Chinese pea pods
1/2 t Xanthan gum

Directions

Place chicken and mushrooms in slow cooker.



Add green onions, soy sauce, ginger, broth, salt and pepper. Cover and cook on low about 4 hours.



Add bamboo shoots, cashews, and pea pods. Turn slow cooker to high.



Add xanthan gum, a little at a time until sauce thickens. Cover and cook on high for 30 minutes stirring at least once.
