Luzern Turnip Casserole

Ingredients

2 lbs Turnips, peeled and sliced
1/2 C Onion, finely chopped
Salt and pepper to taste
1/4 t Ground nutmeg
3 T Butter, cut into 1/8 inch pieces

1/2 C Heavy cream
8 ozs Swiss cheese, cut into small pieces
1/4 C Green onion, finely chopped
1/2 t Xanthan gum

Directions

Layer 1/2 of the turnips, 1/4 cup onion, salt and pepper to taste, 1/8 teaspoon nutmeg and 1 tablespoon butter in slow cooker. Repeat layer. Cover and cook on low for 7 hours or on high for 4 hours. Remove turnips with slotted spoon to a serving dish.



Blend cream and xanthan gum in small bowl until smooth. Sitr mixture into slow cooker. Add cheese and stir to combine. Cover and cook on high until thickened, about 10 minutes. Stir well.



Pour cheese mixture over the turnips and serve. Garnish with chopped green onions.
