Turtle Pudding with White Chocolate Sauce

Ingredients

2 Packages Atkins Chocolate Chocolate chip muffin mix
1/2 C Water
1/4 C Oil
1 Egg

1 C Walnuts
20 Darrell Lea Soft candy caramel chews
Sweetened whipped cream

Directions

Place a vegetable steamer in the bottom of a 5 quart slow cooker. Pour in 4 cups very hot water and turn slow cooker to high.



In a large bowl, combine the muffin mixes, water, oil, and egg. Beat well into the mix. Stir in the walnuts.



Butter and dust with almond flour a 2 quart souffle dish that fits into the slow cooker. Pour the muffin mixture batter into the souffle dish. Push the caramels half way into the mix, do not bury completely in the muffin mix.



Wrap the dish in a double thickness of foil. Tie with a string to use as a handle for lowering and raising out of the slow cooker.



Lower souffle dish into hot crock pot and cook on high for 4 to 5 hours.



Remove the dish and let set for 30 minutes before serving.



Serve with sweetened whipped cream with low carb white chocolate sauce.

Additional Information

LC WHITE CHOCOLATE SAUCE:



5 ozs Low Carb white chocolate bars

2 1/2 ozs Heavy cream



Both ingredients should be room temperature. Melt chocolate and then stir in the cream.



Serve warm poured over the turtle pudding. Garnish with additional nuts and white chocolate curls.
