Country Thyme Meatloaf and Gravy

Ingredients

MEATLOAF:

2 lbs Ground beef
2 t Butter
1/2 C Onion, finely chopped
8 ozs Wild or button mushrooms (shiitake, cremini etc.), sliced
3 Cloves garlic, crushed
3/4 C Crushed pork rinds
1 Egg, beaten
1 t Salt
3/4 t Dried thyme leaves, crushed
1/4 t Black pepper


GRAVY:

1 t Butter
1/2 C Red bell pepper, diced
16 ozs Beef broth
3/4 t Dried thyme
2 t Xanthan gum

Directions

Heat oven to 350F degrees.



In large skillet, heat2 teaspoons butter until hot. Add onion and cook 3 minutes.



Add mushrooms and garlic, cook 6 to 8 minutes until mushrooms are tender. Remove from heat and cool 5 minutes.



In large bowl, combine ground beef, pork rinds, egg, salt, and 3/4 teaspoon thyme, pepper, and mushroom mixture, mix lightly but thoroughly.



On rack in broiler pan, shape beef mixture into 8 X 4 inch loaf. Bake in oven approximately 1 1/4 hours to medium doneness (160 degrees).



Prepare gravy. In medium saucepan heat 1 teaspoon butter untiil hot. Add bell pepper. Cook 5 minutes until crisp tender. Add beef broth and bring to boil. Reduce heat to low and add xanthan gum a little at a time until desired consistency has been reached. Add thyme and heat through.



Carve meatloaf into slices and serve with gravy.
