Heaven's Chocolate Cake

Ingredients

CAKE:

5 Eggs
2 ozs Unsweetened baking chocolate
1 Stick butter
2/3 C Almond flour
1/4 C Splenda
1 t Vanilla
1 t Xanthan gum

SAUCE:

1 oz Unsweetened baking chocolate
1/2 C Heavy cream
4 T Splenda
1/4 t Xanthan gum

Directions

Preheat oven to 350F degrees.



Grease 8 inch springform pan.



Separate eggs and bring to room temperature.



Melt chocolate and butter in microwave or on top of double boiler. Beat egg white until stiff.



In separate bowl beat egg yolks, vanilla, and splenda.



Add chocolate mixture, then the almond flour and xanthan gum.



Gently fold in the egg white.



Pour into springform pan and bake for 20 to 25 minutes (center will spring back when touched).



Cool 10 minutes and remove ring.



SAUCE:



Melt chocolate, stir in heavy cream, vanilla, and splenda.



Add xanthan gum a little at a time until desired thickness has been reached.



Slice cake and spoon sauce over top.



Garnish with sweetened whipped cream.
