Sonoran Sunrise Eggs

Ingredients

12 T Butter
6 Roasted red peppers, peeled, seeded and halved
3 Ripe avocados, pitted, peeled and diced
12 Large eggs

Salt and fresh ground pepper to taste
12 T Monterey Jack cheese, shredded
12 T Sour cream
12 T Fresh cilantro, chopped

Directions

Preheat oven to 350F degrees.



Pleace one tablespoon butter into each muffin tin, place in oven and melt butter. Coat tins with melted butter.



Place a rosted red pepper half at the bottom of each muffin tin and top with 1/4 diced avocado.



Carefully break an egg into each muffin tin and season with salt and pepper.



Top each muffin tin with one tablespoon cheese.



Return muffin pan to oven and bake for 15 minutes or unitl eggs have set to desired firmness.



Dollop each egg with sour cream and sprinkle with cilantro.
