Easy Morning Brunch Pie

Ingredients

1 lb Bacon, crisply cooked and crumbled
2 C Shredded swiss cheese
1/2 C Onion, chopped
1 1/2 C Chopped, lightly steamed broccoli
1/2 C Green pepper, diced
1/2 C Red pepper, diced

1/2 C Tomatoe, seeded & diced
1/2 t Tarragon
Salt and pepper to taste
6 Eggs
1 C Heavy cream
2 C Low carb bake mix
2 c Shredded cheddar cheese
Green onion tops for garnish

Directions

Preheat oven to 400F degrees. Grease a 9 X 13 inch baking dish.



Evenly spread crumled bacon, swiss cheese, onion, vegetables, tarragon and pepper in dish.



In bowl, combine eggs, cream, and bake mix. Mix well until batter is consistancy of a thick pancake batter, add more if necessary. Stir in 3/4 cup cheddar cheese.



Pour batter over ingredients in baking dish. Use a spoon/fork to move vegetables around slightly to allow batter to surround them.



Sprinkle with remaining cheddar cheese on the top.



Bake 28 - 35 minutes or until toothpick inserted near center comes out clean. Allow to stand 5 minutes after removing from oven. Cut into 12 squares and serve garnished with the green onion tops.
