Herbed Asparagus

Ingredients

ASPARAGUS:

1 Gallon salted water
2 Bunches asparagus
1 Gallon ice water
MARINADE:

2/3 C Olive oil
1/4 C White wine vinegar
Juice of 1 lemon
1/2 t Salt
1/2 t Cracked black pepper
1 Clove garlic, minced
1 t Fresh dill, chopped
1 t Fresh mint, chopped
1 t Fresh Parsley, chopped

Directions

Bring the salted water to a boil (salt will enhance the flavor and brighten the green color).



Add the asparagus and cook for just 1 to 2 minutes.



Drain and plunge the asparagus into the ice water to stop the cooking.



Mix together the remaining ingredients and pour over the drained asparagus in a non-corrosive container.



All the asparagus to sit in the marinade for at least 30 minutes up to 2 hours, depending on how concentrated you care for the flavor to be.



If you refrigerate, allow it to come to room temperature before serving.
