Ingredients

2 packages Jimmy Dean Sausage
1 jar pickled jalapeno slices
1 8 oz pkg cream cheese

1/4 cup Atkins bake mix or unflavored protein powder
1 package plain pork rinds, crushed

Directions

In a medium bowl, combine sausage and bake mix.



Take small amount of mixture and press out into a patty. Place one jalapeno and dab of cheese in middle of patty and form into a ball around the pepper and cheese.



Roll in crushed pork rinds and place in 9 x 13 ungreased baking dish.



Bake at 350 degrees for 20-25 minutes. Check for doneness by cutting one of the balls open. The sausage should be cooked through.

Additional Information

Try wearing surgical gloves to make sausage balls. This keeps the mixture from sticking to your hands. If you don't have gloves, dipping your hands in cold water works well.
