Creamy Avocado Slaw

Ingredients

1/2 Head Cabbage, shredded fine
1 Ripe Avacado, cubed
1/2 C Mayo
1 t Mustard
Juice of 1 Lemon
1 Packet of Splenda
Dash of Hot Sauce
Salt and Pepper to taste

Directions

Place cabbage and avacado in bowl. In a seperate bowl, wisk together dressing ingredients. I thought it was a little too sweet with a whole packet of splenda, so you may want to taste it using just a half a pack. Pour Dressing over Cabbage, and toss. Add salt and pepper to taste. Add extra lemon juice if needed for just the right "tang". Enjoy!!

Additional Information

I came up with this one night, when I wanted something "hardier" than just cole-slaw, for our low carb side dish. It is very cool and creamy :)

I like this with anything from steak to burgers to chicken :) You can make a bigger batch easily by using a whole head of cabbage and 2 avacados.
