South of the Border Stuffed Bell Peppers

Ingredients

2 C Chopped fresh tomatoes
2 T Chopped fresh cilantro
2 Jalapeno peppers, seeded and chopped
3 Cloves garlic, minced
1 t Dried oregano
1/2 t Ground cumin
16 Ozs Lean ground beef
2 Egg whites

1/4 C Green onion, sliced
Salt and pepper to taste
1 Large Green bell pepper
1 Large Red bell pepper
1 Large Yellow bell pepper
1 Large Orange or purple bell pepper
8 sheets 12 X 12 inches aluminum foil sprayed with cooking spray

Directions

Preheat oven to 400F degrees.



Combine tomatoes, cilantro, jalapeno peppers, garlic, oregano, and cumin in a bowl and stir. Set aside.



Thoroughly combine beef, egg, onion, salt and pepper in a large bowl. Stir in 1 1/3 cup of the tomatoe mixture.



Rinse and cut peppers in half lengthwise and seed.



Spoon filling mixture evenly into the pepper halves.



Place each pepper half on a foil sheet. Double fold sides and ends of foil to seal packets. Place packets on baking sheet.



Bake 30 minutes or until meat is done and the peppers are tender. Remove from oven. Carefully open one end of each packet to allow hot steam to escape. Open packets and transfer pepper halves to a serving plate. Serve with remaining tomatoe mixture.
