Scallops with Fresh Herb Tartar Sauce

Ingredients

24 ozs Sea scallops
4 T Butter, melted
1/2 t Pepper
1 2/3 C Mayonnaise
1/4 t Paprika
2 T Green onion, finely sliced

1 t Finely shredded lemon peel
4 t Lemon juice
3 t fresh, snipped parsley
3 t Fresh, snipped dill
3 t Fresh, snipped thyme
Fresh lemon wedges

Directions

Halve any very large scallops. Thread scallops onto eight, 10 inch skewers, leaving a 1/4 inch space between pieces. Place skewers on the greased rack of a broiler pan.



In a bowl stir together melted butter, pepper, paprika. Brush half of the butter mixture over the scallops. Broil about 4 inches from the heat for 8 to 10 minutes or until scallops are opaque, turning and brushing often with the remaining butter mixture.



TARTAR SAUCE:



In bowl, stir together mayonnaise, green onion, lemon peel, dill, thyme, and parsley. Refrigerate 24 hours.



Serve scallops with tartar sauce and lemon wedges.
