Bacon Scallion Mashed Cauliflower

Ingredients

2 lbs Cauliflower, cleaned and cut into medium pieces
4 Cloves garlic - peeled
10 Strips bacon - cut into 1/2" pieces

1 C Thinly sliced scallions
1/4 C Heavy cream - warmed
1/4 C Sour cream
1 t Salt
1/4 t Black pepper

Directions

In a large pot, cover cauliflower and garlic with lightly salted water. Boil until cauliflower is fork tender.



Fry bacon in skillet until crisp; drain on paper towels.

Pour out all but 1 tsp. bacon grease from pan.



Add scallions to grease, saut
