Eggplant Fritters

Ingredients

2 eggplants
3 tbsp half and half
1/2 tsp vanilla
1/4 tsp pumpkin pie spice
2 tbsp splenda
2 tbsp brown sugartwin
1/2 tsp baking powder
cooking oil
soy flour or protein powder

Directions

Peel and cut up eggplant. Boil in salted water until tender. Drain, mash and mix eggplant with remaining ingredients except oil. Add enough flour to mixture to make a pancake batter consistency. Drop by spoonfuls into thin layer of cooking oil. Brown fritters on both sides. Can be sprinkled with a little Splenda when served.
