Mixed Berry Preserves

Ingredients

1 C Blueberries
1 C Blackberries
1 C Strawberries

1 box Strawberry sugar free jello
Water
Splenda (to taste)

Directions

Put the berries in a large stockpot or dutch oven, over medium heat. Add 1/3 cup of water. Crush berries with a potatoe masher.



Continue to heat berries until completely soft.



Put berry mixture through a sieve to remove seeds.



Measure remaining juice, and add water if necessary to increase volume to 1 3/4 cups. You may sweetened to taste with splenda. Return to stock pot and stir in jello. Bring to a full rolling boil, stirring constantly. Continue to boil for exactly one minute. Remove from heat.



Allow mixture to cool for another minute, then skim off foam from the surface.



Pour preserves into a glass or plastic container, wipe rim, close lid, and refrigerate.




Additional Information

You can melt a little of this preserves with a little water to make a topping for low carb ice cream.



Make a low carb smoothie with some of these preserves, ice, and diet 7up. water and heavy cream.



Use within 4 weeks or freeze if longer storage is requied.
