Ingredients

1 1/2 C Almond flour
1 Low Carb chocolate bar, chopped into small chunks
3 T Butter, melted
1 1/3 C Water, boiling
1 Two packages (4 serving size) Jello sugar free sparkling wild berry gelatin

2 C Cold crystal light lemonade prepared
1 8oz Package cream cheese, softened
1/2 C Heavy cream
A few fresh strawberries with leaves and mint springs for garnish

Directions

In a medium mixing bowl stir together almond flour, chocolate chunks, and butter.



Line an 8 X 8 X 2-inch baking pan with heavy foil. Press crumbs into the bottom of the foil lined pan and set aside.



In a large mixing bowl combine boiling water and gelatin, stir until completely dissolved. Stir in the chilled crystal light lemonade. Chill until partially set (the consistency of unbeaten egg whites).



Meanwhile, in a large mxing bowl beat the cream cheese until fluffy. With mixer running at low spped, gradually beat in the partially set gelatin.



In a chilled small mixing bowl beat whipping cream until soft peaks form, fold into gelatin mixture. Chil again until mixture mounds when spooned.



Turn gelatin mixture into the crumb lined pan. Cover and chill for 24 hours. Freeze slightly before serving.



To serve, cut dessert into squares, top with a strawberry with leaves on it and mint sprig.
