Spinach Pancakes

Ingredients

2 C Fresh spinach, cooked, chopped, and cooled
1 Egg, beaten

4 ozs Cheddar cheese
2 T Onion, chopped
3/4 T Olive oil

Sour cream and salt to garnish.

Directions

Heat oil in pan.



Mix spinach, egg, cheese, and onion.



Drop mixture to make 2 pancakes.



Fry until golden on each side.



Serve with a dollop of sour cream and sprinkle with salt.
